Piña Colada Overnight Oats Recipe

Looking for a taste of the tropics for your next breakfast?

Well, this Piña Colada Overnight Oats is sure to satisfy.

It comes together in less than 5 minutes and is a fantastic recipe to have under your belt.

The oats are super creamy and coconuty, plus you have the sweetness of the pineapple chunks - its so good!

We also like to add a scoop of plain protein powder to ours, especially if we're eating it as a post workout breakfast. This is completely optional though, and can easily be left out.

Sometimes we leave this recipe overnight, and sometimes we make it up 2 hours in advance, either way its delicious. However, you do need to give it at least 2 hours to become creamy and delicious.

Toppings of course are optional and down to your personal preference, and you can add as many or as little as you like. We just like to add some extra Coconut yoghurt, sprinkle of desiccated Coconut and some more pineapple chunks, just to keep the Pinã Colada flavours. And if we're feeling extra fancy, we'll add an edible flower, for the full tropics experience.

Make-ahead and overnight breakfast recipes have been a real game changer in our house, and we're so glad that we have implemented this small change.


Lets get on with this super easy and delicious recipe.



INGREDIENTS

Makes 2 large servings


  • 1x cup of Organic Oats

  • 1x cup of Milk

  • 1/2 cup of Thick Coconut Milk

  • 1/2 cup of Coconut Yoghurt

  • 2x tbsp of Flaxseed

  • 1x heaped tbsp of Dessicated Coconut

  • 1x cup of diced Pineapple (canned or fresh)

  • Suggested servings of plain Protein Powder (optional)

  • Capful of Vanilla Extract


For toppings - optional


  • Dollop of Coconut Yoghurt

  • More chunks of Pineapple

  • Sprinkling of Dessicated Coconut

  • Edible Flowers (just to look fancy & on holiday)


METHOD


Excluding the toppings, add everything to a glass measuring jug and mix well.

Transfer evenly to your serving pots. Cover with a lid and pop into the fridge overnight or for at least 2 hours.

When ready to eat, add some toppings of your choice, and enjoy!
