Pork Tacos With Avocado & Lime Crema - Gluten & Grain-free

It's Taco Night!

These Pork Tacos are SO SO GOOD and are great any day of the week - not just for 'Taco Tuesdays'.

These Tacos are simple, healthy, nutritious, easy and most of all, they're Delicious!

Not only are these Tacos Gluten-free, but they're Grain-free too. Our Tortillas are made from Cassava, also known as Mandioca.

Cassava Flour is a fantastic substitute to regular flour - making things Gluten-free and Grain-free...

The meat & veggies seasoned in our homemade Easy Taco Spice Mix are delicious by themselves in the Tortillas, however the Avocado & Lime Crema takes the Tacos to the next level.

Every mouthful will give your Taste Buds a FIESTA!

INGREDIENTS

Serves 4-5


For the filling



For the wraps



For the sauce


  • 1/2 of a XL Quintal Avocado or 1 large regular Avocado (if using a XL Quintal we save the other half for slicing & adding as a topping)

  • Juice of 2 Limes & the zest of 1

  • Large pinch of sea salt

  • Large pinch of Pepper

  • 3x heaped tsp of Ground Coriander or a handful of fresh Coriander

  • 1x heaped tbsp of Extra Thick Cream (could substitute for a thick natural yoghurt)

  • 1x tsp of Tabasco Sauce (Add extra to suit your taste)


For toppings


  • Slices of Avocado

  • Handful of freshly chopped Coriander


METHOD


We like to start by preparing and cooking our Tortillas first, however if you're using shop bought then skip this part.

Once your Tortillas are prepared we like to begin making our Avocado & Lime Crema

Add all of the ingredients excluding the Extra Thick Cream to a blender or large jug and blitz with a hand blender until smooth.

Now add the Cream and mix through by hand.

Pop it into the fridge until ready to serve.


Preheat 2 medium size pans on a medium heat and then add your olive oil.

In one pan add the veggies and the Pork Mince to the other. If your Carrots aren't finely chopped like matchsticks then they will take longer than the Pork to cook, so start cooking the Carrots 5-10 minutes before the meat.

Stir occasionally to prevent sticking.

Cook until the ingredients are fully cooked. The pork will take approx 12 minutes or until cooked through & browned.

We like to divide our Taco Spice Mix equally between the meat & veggies and we add it a few minutes before the ingredients are cooked. Mix well and then remove from the heat once cooked.


Time to assemble and serve your Tacos.

Layer up your delicious Tortillas with the meat & veggies, sliced Avocado, fresh Coriander and then top with the AMAZING Avocado & Lime Crema - ENJOY!
