Pumpkin Breakfast Slice

So many delicious recipes, it's hard to fit them all into one season. Although we like to try our best.


This recipe is designed with breakfast in mind and is delicious.

Not only is it delicious, but healthy too and packed full of our favourite ingredients.


The ingredients in this recipe are not only suitable for vegans, but for those on a gluten free diet too ( as long as the oats are gluten free )



It's a breakfast the whole family is sure to enjoy and is perfect served with a dollop of your favourite yoghurt or by itself.


Although this recipe was designed with breakfast in mind, it also makes a perfect snack and picnic addition.

It's so tasty...

INGREDIENTS

makes approx 8 slices


  • 1 & 1/2 cups of oats

  • 1/2 cup of cassava flour ( or flour of your choice )

  • 1/2 cup of pecan butter ( or your favourite nut butter )

  • 1/2 cup of honey ( or maple syrup if vegan )

  • 1/2 cup of pumpkin puree

  • 1/4 cup of chopped pecans ( or your favourite nuts )

  • 2x tsp of pumpkin spice

  • 1x tsp of vanilla

  • 1/2 cup of melted coconut oil

  • 1x cup of coconut milk

  • 1x tbsp of white vinegar

  • 1x tsp of bicarb of soda


METHOD


Pre heat the oven to 210 C

Line a 10 inch oven dish.


In a large mixing bowl add all of the dry ingredients excluding the bicarb of soda and mix together by hand.

Now add all of the wet ingredients followed by the bicarb of soda. Mix together, but do not over mix.

Transfer to your lined dish and place it on the top shelf of the oven and bake for 30 minutes.

Allow to cool for 5 minutes and slice.

We like to eat ours warm from the oven, but they taste just as good cold - Enjoy!
