Pumpkin Hummus

It's in every recipe and so we thought why not add it to our hummus...


This traditional Middle Eastern dish made from chickpeas is a must when you're looking for a healthy and nutritious dip or spread... Commonly made with tahini sauce, we however opted for homemade peanut butter instead and may I say it tasted delicious...


If you're a fan of hummus then you're sure to love this AUTUMNAL version.


So comforting...


Hummus is great. It's so versatile and can accompany many dishes. It's perfect with fresh salads, in falafel wraps ( my favourite ), side dish at bbq's, pizza topping, a dip, a spread - the list is endless...

Fresh hummus can be stored for up to 3 days in an airtight container in the fridge, which is fantastic for meal-prep.

This quick and easy recipe is delicious and will be sure to give your taste buds a FIESTA!

INGREDIENTS


serves approx 8-10


  • 510g of cooked chickpeas ( I use canned )

  • 1/2 cup of raisins

  • 1/2 cup of pumpkin/squash pure

  • 2 tbsp of extra virgin olive oil ( plus extra for serving )

  • 1 tbsp of smooth peanut butter ( we use homemade - our recipe is here )

  • 1 large clove of garlic

  • 1 large lemon ( juice only )

  • 1/2 cup of water

  • Pinch of sea salt

  • 1 1/2 tsp of black pepper

  • 1 tsp of nutmeg



METHOD


Drain your chickpeas and add them to your food processor.


Peel your clove of garlic and add it to the processor and blitz together until fairly smooth.


Now add all the other ingredients ( EXCEPT FOR THE RAISINS ) and blitz until creamy and smooth. If you like your hummus a thinner consistency just add a dash of water until you get your desired consistency.


Add the raisins and fold into the mixture.


Transfer to your serving bowl and drizzle with olive oil - Enjoy!



If you are not consuming immediately then cover and keep in the fridge.


Consume on the same day or store in an air tight container in the fridge for up to 2 days.




SERVING SUGGESTION


Drizzle the hummus with fresh olive oil, your favourite chilli sauce and a squeeze of lemon juice.
