Quick & Easy Yoghurt Flatbread - With A Mediterranean Drizzle

These quick, easy and 100% DELICIOUS flatbreads are sure to be a firm favourite for a quick snack, light lunch or side accompaniment to a saucy dinner.

This was actually our first time making flatbread and we were amazed at just how quick they were to make and they tasted SO much better than any shop bought ones we'd tried.

On our Cooking journey it's amazed us just how quick and easy so many recipes actually are. Take this recipe for an example. I thought that making flatbreads would be a lengthy progress like many other bread/dough recipes, however in reality they're one of the easiest and quickest things that we've ever made...

This recipe was inspired by Jamie Oliver's flatbread recipe and we are in love with it. It's such a versatile recipe which can be tweaked to compliment the genre of food you are preparing.

This recipe is inspired by the Mediterranean and we went with Italian seasoning in the butter drizzle, but if you fancy the flat bread with your curry then simply adjust the herbs and spices that you add to the butter.

In this recipe we use coconut yoghurt, mainly because its our favourite and we're a little obsessed, but it goes amazingly well especially if we're serving it with a spicy curry - it's so good!

These flatbreads are soft and fluffy and the butter drizzle is finger licking good.

INGREDIENTS


For the dough


  • 420g plain flour - plus extra for dusting

  • 3x heaped tsp baking powder

  • Pinch of salt

  • 400g coconut yoghurt (can use plain but we love the hint of coconut )


For the drizzle


  • 80g butter

  • Pinch of salt & pepper

  • 1 1/2 tsp garlic granuals

  • 1x tbsp of mixed Italian herbs

  • 1x tbsp of dried parsley


METHOD


In a large mixing bowl add your flour, baking powder and salt and mix together well ensuring an even distribution of the baking powder through the flour.

Now add your yoghurt and start mixing together with a spoon and then with a lightly floured hand.

Once fully combined transfer to a lightly floured clean surface and divide into approximately 9 equal balls.

Using the palm of your hand flatten the dough to create your shape - you may also want to use a rolling pin to help. They should be approximately 1/2 cm thick.

When you're ready to cook them, simply add a small drizzle of olive oil to a nonstick frying pan and heat on a high heat, before adding your dough.

Cook each one for approximately 3 minutes on each side. They should have nice patches of colour to them.

Once they are all cooked go ahead and make your very quick and delicious drizzle.

Add the butter to the frying pan and Once melted add the seasonings and herbs and swirl them around the pan. Remove from the heat.

Puy your flatbreads onto a serving plate and then drizzle all of the herb butter over them.

Delicious!

Use up all of that herb butter - the flatbreads will soak it up.

Serve and enjoy!
