Sometimes, you just want delicious, comforting food. Well, this is one of those things and it's perfect to eat whilst watching something like Harry Potter on a rainy day. It's gooey, chocolatey and moreish and we just can't get enough... This scrumptious treat is so easy to make and uses simple ingredients. If you would rather have a firm cookie that's not so messy, simply leave them in an airtight container for several hours where they will harden. We also love eating the cookies with a scoop of vanilla ice cream, it truly makes for a perfect combination. They're perfect for autumn time, but honestly they can be enjoyed at any time of the year. Besides ice cream, hot custard also goes amazing with them. Writing about these cookies is making me want to eat some more, so without further ado, let's get on with the recipe!

INGREDIENTS
Approx 12 servings
300g of plain flour
130g of butter
100g of caster sugar
100g of light muscovado sugar
1 tsp of bicarbonate of soda
270g of dark chocolate (broken into chunky pieces)
1 egg
125g of large camping marshmallows
2 tsp of vanilla extract
pinch of salt
METHOD
Preheat the oven to 190 C this is very important. Line your 30 x 20cm tray.
In a large mixing bowl add the flour, bicarb, salt and chocolate and mix with a spoon or your hands well and set to one side.
Melt the butter in a small saucepan and then add both the sugars.
Mix together well until the sugars have completely dissolved into the melted butter and then remove from the heat.
Add the vanilla extract and the egg and whisk together by hand until everything is fully incorporated (you need to move fast on this bit or else the egg will start cooking).
Quickly add this to the dry ingredients and mix together well. We find it best to use a spoon and then finish it off with our hands.
Evenly distribute half of the cookie dough across your lined tray. The mixture will seem quite sparse, but when it bakes it will all spread out.
Now evenly distribute all of the marshmallows across the cookie dough, making sure to press them down into place.
Now distribute all of the remaining cookie dough on top of the marshmallows.
Bake in the oven for exactly 25 minutes, remove from the oven and then allow to cool for at least 10 minutes if you want a gooey cookie or if you want a firmer and still a gooey marshmallow cookie then allow to cool fully.
Serve with a scoop of vanilla ice cream, or something else of your choice and enjoy!
Consume immediately or store in an airtight container in the fridge for 3 - 4 days
