We never made this Vegan, however you could easily make it vegan simply by using vegan milk, yoghurt and cream...
We absolutely LOVED this overnight chia recipe and is perfect for the warmer months of spring and summer.
The blitzed strawberries turn the chia pudding an awesome pastel pink too.
Overnight breakfast recipes are fab and make morning's a little less stressful, especially if you're short on time.

INGREDIENTS
Makes 1 serving
2x tbsp of Organic Chia Seeds
1/2 Cup of your favourite milk
1x heaped tsp of thick cream
1x tsp of honey or maple syrup (optional)
Approx 8-10 strawberries (stalk removed) Plus a few for topping
1x Cup of Natural Yoghurt
Sprinkling of almond flakes
METHOD
Add approx 7 of your strawberries to a blender and blitz until smooth.
In a small bowl add the chia and milk and stir.
Now add your blitzed strawberries and cream and mix until the ingredients are evenly combined with the chia.
Slice your remaining strawberries and place them around the edges of your Mason jar or serving dish.
Add your chia mixture to your serving bowl, cover and place in the fridge for several hours or overnight.
When ready to eat, top with the yoghurt, fresh strawberries and a sprinkling of almond flakes - Enjoy!
