Salads are AMAZING!
Long gone are the days of BORING & BLAND salads.
Salads can be fun & delicious and made in very little time and with little effort.
We LOVE this salad by itself for lunch or as a side with dinner. Its quick, simple & delicious and the Chilli Yoghurt Dressing takes it to a whole new level - It's SO GOOD!
For the base of the salad we went for, rocket / arugula. Its peppery leaves are delicious. This delicious green is a nutrient-dense food high in fibre and is high in several vital nutrients such as ;
Calcium
Potassium
Folate
Vitamin C
Vitamin K
Vitamin A
We also added in some grated carrot, sun-dried tomatoes and some delicious walnuts and pumpkin seeds. The salad would be great by itself with a drizzle of olive oil and some olive oil, however we decided to take it to the next level with our Chilli Yoghurt dressing.
The dressing takes just a few minutes to make and is great with various other salads or drizzled over Avocado on toast...
If you like it spicy then simply add more of your favourite chilli paste. We kept it fairly mild because our stomach is a little sensitive with too much spice.

INGREDIENTS
Serves 2 as a salad bowl
For the salad
200g of Rocket / Arugula ( washed )
250g of Sun-dried tomatoes ( roughly chopped )
1x cup of Walnuts ( roughly chopped ) (extra serving optional)
1/4 cup of Pumpkin Seeds (extra for serving optional)
1x large Carrot - grated
For the dressing
1x cup of Natural Yoghurt
1x tbsp of Olive Oil
pinch of salt & pepper
1x tsp of Sambal Oelek Chilli Paste ( or your favourite chilli paste )
Juice of half a lemon
METHOD
Simply add all of your salad ingredients to a large serving bowl and mix together using your hands or utensils etc and pop to one side.
In a small bowl add all of your dressing ingredients and mix together evenly.
Plate up your salad and then top with the delicious yoghurt dressing and enjoy.
We like to plate up our salad, add the dressing and then top with extra walnuts and pumpkin seeds - Delicious!
