The Best Creamy Tortellini Soup Recipe

If you're looking for an easy yet truly delicious and satisfying soup recipe, then this is the recipe for you.

We're not usually ones for bragging. However, this soup deserved to be bragged about 😉

Every mouthful is an absolute joy, and packed full of luxurious flavours.

This Tortellini soup recipe is creamy, yet light and the Tortellini adds a nice surprise of texture and flavour.

This Tortellini soup recipe is vegetarian. However, you could add meat filled Tortellinis if you'd prefer. In this recipe we use just one 250g pack of store bought Tortellini. However, if you wanted to bulk the soup out to feed more mouths then we recommend adding in two packs.


To this creamy and tomatoe based soup we've also added in some veggies;


  • Carrot

  • Courgette

  • Red Bell Pepper

  • Onion

  • Garlic


We also use a simple blend of dried herbs;


  • Garlic Powder

  • Dried Oregano

  • Sweet Paprika


And alongside the dried herbs we also add in fresh herbs. These fresh herbs could be substituted with dried. However, for maximum flavour like ours, we highly recommend and encourage you to use fresh herbs if possible.


  • Fresh Bay Leaves

  • Fresh Thyme Leaves


This creamy Tortellini soup feels like a real treat, and we would happily serve this to guests at a dinner party or special occasion.

Soups also make fantastic meal-prep recipes. Just store in an airtight glass container in the fridge.

INGREDIENTS

Tortellini soup recipe

  • 1x large Onion - finely diced

  • 1x medium Carrot - finely diced

  • 1x small Courgette - diced

  • 1x Red Bell Pepper - finely diced

  • 5 x Cloves of Garlice - crushed & finely diced

  • 1x (240g) Tin of Canned Chopped Tomatoes

  • 300g of Thick Cream

  • 1x cup of Grated Parmasean Cheese

  • 2x litres of Water

  • 2x tbsp of Olive Oil

  • 1x heaped tbsp of Butter


Herbs & Spiced


  • 2x heaped tsp of Garlic Powder

  • 1x heaped tsp of Sweet Paprika

  • 1x heaped tsp of Dried Oregano

  • 2x large pinches of Crushed Black Pepper

  • 3x large pinches of Sea Salt

  • 2x Fresh Bay Leaves

  • 1x tbsp of fresh Thyme Leaves (recommend using fresh)


Tortellini


  • 250g of your favourite store bought refrigerated Tortellini - any flavour you like (we use mixed cheese Tortellini)


Toppings - optional


  • Sprinkling of Crushed Black Pepper



METHOD


In a large saucepan add the oil and butter and heat on a high heat.

Once heated add in the diced onion, carrot and garlic. Sauté for a few minutes until the onions have softened and then add in your dried herbs and seasonings. Combine together well.

Reduce to a medium-low heat and add in the courgette and red bell pepper. Mix together and cook for a couple of minutes before adding in your canned chopped tomatoes, and water. Stir.

Add your fresh Bay Leaves and fresh Thyme Leaves, stir and turn up the heat to bring to a boil.


Stir occasionally and once it's come to a boil carefully add in your Tortellini and cook as instructed on the packing - usually 3-5 minutes.


Once the Tortellini is cooked, turn to a very low heat and add in the cream and parmesan. Stir and remove from the heat once the cream and cheese is fully combined.


Serve, top with a few twists of Cracked Black Pepper, and enjoy.
