The Best Lentil Soup

This Lentil soup is hearty, loaded with flavour, and 100% DELICIOUS!

Sometimes, the simplest of ingredients make the most incredible recipes.

Most soups are light, and honestly not that filling. However, this is definitely a filling soup. The lentils really bulk it out, leaving your tummy satisfied. Plus, if served with some freshly sliced bread to dip in you are going to feel full - would highly recommend.

Perfectly delicious served by itself. However, the added sprinkle of cheddar cheese on top is simply, scrumptious.

For the Lentils we went with orange dried lentils, but the choice is really down to you. Any Lentils would taste delicious.


Soup also makes a fantastic recipe for meal-prep. Store in an airtight container in the fridge, or freezer.


Can I use canned Lentils instead of dried Lentils?


Absolutely! This recipe does call for dried Lentils. However, if you don't have them or would prefer to use canned, then that is absolutely fine. Just add them in towards the end of cooking.

So without further ado let's get on with the recipe.

INGREDIENTS


  • 2x medium sized Yellow Onions - finely diced

  • 3x Large Cloves of Garlic - peeled, crushed & finely diced (or use Garlic crusher)

  • 5x medium sized Carrots - peeled and finely diced cubes

  • 1 & 1/2 cups of dried Lentils - rinse with cold water before using

  • 520g Of Passata

  • 6 cups of Water

  • 1x tbsp of Apple Cider Vinegar

  • 3x tbsp of Olive Oil

  • 2x large pinches of Sea Salt

  • 2x large pinches of Black Pepper

  • 2x heaped tsp of Cumin

  • 2x heaped tsp of Smoked Paprika

  • 1x heaped tsp of Chilli Flakes

  • 3x heaped tsp of Ground Coriander

  • 2x Bay Leaves


For the topping


  • Large handful of grated Cheddar Cheese


METHOD


In a large saucepan add the oil and heat on a high heat, before adding in your onions, carrots and garlic.

Stir together and then add in all of the spices. Mix together thoroughly ensuring your veg is covered in the spice mix.

Add in your Apple Cider Vinegar and mix.

Turn to a low heat and add in your rinsed dried Lentils.

Give them a good mix through, coating them in the delicious spices.

Now add in the passata, and mix before adding in the water. Mix again.

Now, turn back up to a high heat and bring to a simmer.

Once simmering reduce to a low heat to maintain a slight simmer.

Allow to simmer for approximately 45 minutes or until your carrots are cooked to your liking.

Be sure to stir occasionally to prevent any sticking to the bottom.


Once the Lentils are cooked and the carrots are to your liking, go ahead and turn off the heat.


Serve and enjoy!


We like to top ours with some grated cheddar cheese - delicious!


Freshly sliced bread is also highly recommend to soak up all that deliciousness 😋
