The Grinch Cookie - Crinkle Cookie With White Chocolate

If you know anybody, or you yourself are a bit of a GRINCH at Christmas, then these are the cookies for you.

This cookie recipe is fun and delicious, and are sure to brighten anyone's mood at Christmas.

Warning though, they are loaded with sugar, and highly addictive. We have warned you...

These Christmas cookies deserved the name, Grinch Cookies, due to their colour combo and high sugar content. However, I guess if you wanted to reduce the sugar then you could easily opt out from the sugar dip. They will still taste and look fantastic.

Green, red and white are a classic Grinch colour combo, and these cookies have all three. Green cookie with a green sugar dip. White chocolate topping, and red sprinkles to finish.

Super easy, super Christmassy, and super delicious.

Grinch fans are sure to love them, and those who are not, will love them too.

They scream, CHRISTMAS!

This cookie recipe requires no chilling, and bake in just 10 minutes. They're a super soft cookie that melts in the mouth, and who says they're only for Christmas. Simply leave out the food colouring and green sugar, and you have a delicious cookie recipe to enjoy all year round.

These are 'Crinkle' cookies, hence why they have a sugar dip, however you can easily leave that part out, and they still taste amazing...


Let's crack on with the recipe...

INGREDIENTS


  • 120g Soft Butter

  • 160g Caster Sugar

  • 100g Golden Granulated Sugar

  • 2x Eggs

  • 2x Capfuls of Vanilla Extract

  • 2x tsp of Green Food Colouring (you may need to use more or less, depending on the quality of the food dye to achieveyourdesiredcolour)

  • 300g of Plain Flour

  • Pinch of Salt

  • 1x heaped tsp of Baking Powder


For the Sugar dip


  • 45g of Granulated Sugar

  • 25g of Caster Sugar

  • 1x tsp of Green Food Colouring (may need more depending on your colour preference)


For decorating


  • 80g White Chocolate

  • Red Sprinkles of your choice



METHOD


Preheat the oven to 180C and line a cookie sheet with parchment paper.


Add the sugar toppings to a shallow bowl and add the green colouring.

Mix with a spoon and then rub between your fingers to ensure even colour distribution. Put to one side.


In a glass bowl add the flour, salt and baking powder. Evenly mix together with a spoon, and place to one side.


To a freestanding mixer add the butter, caster sugar, and golden granulated sugar together until fluffy.

Scrape down the sides if needed.

Add the eggs one at a time, and beat in-between.

Now add the vanilla and green food colouring, and mix together well. Scrape the sides down if needed.

Now add the dry ingredients to the batter, and beat together until fully combined.


Using a 1 inch cookie scoop, scoop the cookie mixture into a ball, and then roll it in the green sugar. Be sure to coat each cookie ball well.


Place at least 1 inch apart on the lined cookie sheet, and bake for 10 minutes.


The cookies should be beautifully cracked and still slightly soft.


Allow to cool for 10-minutes, before transferring to a wired cooling rack, and cooling completely.


When the cookies are almost cool it's a good time to prepare your chocolate for decorating.

Bresk your white chocolate into squares and melt using the bain-marie method (or whichever method you find works best for you)

Once melted, allow to cool slightly before transferring it to your piping bag or in our case, a freezer bag, with the end snipped very small.


Your cookies should be fully cooled before decorating.


Pipe or simply drizzle your white chocolate over your cookies - freestyle, and sprinkle with sprinkles.

Decorate however you wish - have fun!


Allow the chocolate to firm, then serve and enjoy.
