The Perfect Autumn Vegan Cookie

As the nights draw in and the days start to cool, it's time to start saying, "Goodbye summer and hello autumn"... and yes, yes, yes, I know it's not quite autumn, however I can't help but get a little excited. The thought of beautiful golden-orange leaves decorating the trees and the crunch of them beneath your feet when they fall. The smell of the fresh crisp air in the mornings, scented autumnal candles, your favourite snuggly jumper, cosy nights in-front of the fire, or wrapped in a blanket watching your favourite film... all of this makes me very happy!... And as the days change so does my palette and appetite for food. I don´t want fresh crisp salads for lunch or tropical fruit smoothies for my breakfast or a fruit kebab as a snack, I want hearty and warming food with a bit of spice, I want oats and cookies and gooeyness...

And so I have created these gorgeous autumn vegan cookies to get me in the mood for autumn and they are perfect for any time of the day, and are perfect for meal-prep snacks.


INGREDIENTS

makes approx 20 cookies


2x cups of plain flour

2x cups of oats

1x cup of desiccated coconut

1x cup of brown soft sugar

1x tbsp of golden syrup

1x tbsp of peanut butter ( personally I prefer smooth, but crunchy is fine too )

100g of dark chocolate chips ( suitable for vegans )

1x tsp of baking powder

1x tsp vanilla extract

1x desert spoon of mixed spice ( you can add more or less depending on your preference )

1x cup of almond milk ( or a milk of your choice )

2x tbsp of extra virgin olive oil

pinch of sea salt


METHOD


Preheat the oven to 150 C fan oven, gas mark 2 or 300 F

Line a large baking tray with parchment or a silicone sheet.

In a large mixing bowl add all of the ingredients and mix by hand with a wooden spoon.

Once it's well mixed together take pinch size dollops of the mixture and roll into balls. You're aiming roughly for a ping pong ball size.

Place them on the baking sheet approx 1 inch apart and then using the back of a fork press the dough mixture down slightly ( not to flat - they're supposed to be chunky )



Place in the oven for approx 12 - 15 minutes, until slightly golden. They will be soft to touch, but will harden a little once cooled. These are not crispy and have a slight doughiness to them, which I love.

Super comforting and delicious. A great mid-morning snack. I left the peanut butter out and they were still so good.
