We LOVE GRANOLA! - Especially homemade..
It's super quick to make, delicious and pretty healthy...
Granola is something we make up at least once or twice a week and it's something you can add to smoothie bowls, yoghurt bowls or with your favourite milk. ( We also find ourselves just grabbing handfuls to snack on 😂 ) Making it perfect for meal-prep.
Granola is also so versatile and ingredients can be swapped or added in to suit your mood, the season or to satisfy a craving...
I base for Granola is usually the same and we use oats mixed with peanutbutter and honey to create delicious golden clusters. We simply then add dried fruits, nuts and seeds etc to suit our mood.
There are so many flavour options for Granola, however this Tropical Granola is one of our favourites especially when the weather is warmer...

INGREDIENTS
500g of oats
5x heaped tbsp of Smooth Peanut butter
4x heaped tbsp of honey
1/2 cup of almond flakes
1/2 cup of Sunflower Seeds
1x cup of coconut chips
1x cup of candied Tropical fruits
1x heaped tbsp of dessicated coconut
1x cup of banana chips
METHOD
Preheat the oven to 250 C and line a large baking sheet.
Begin by making your golden clusters.
In a large mixing bowl add your oats, peanutbutter and honey and mix together with a spoon.
Once mostly combined get in there with your hands and squash the oats into the honey and peanutbutter - start creating your clusters. ( We aim for a mixture of cluster sizes )
Transfer your oats to your lined baking sheet and spread out evenly.
Pop them onto the top shelf of the oven and bake for approximately 15 minutes or until the oats are slightly golden.
Once the oats are golden, remove them from the oven and allow to cool fully before assembling all of the ingredients together.
Once it's time to assemble simply add all of the ingredients to a large mixing bowl and evenly mix together - we just do this by hand. Now transfer to an airtight container and that's it - its ready to be served and enjoyed.
Absolutely love granola and this recipe is perfect for the summertime. A real taste of summer and the tropics. Such a good mix of flavours. Very easy to make and the clusters are delicious.
