We love a good cookie for breakfast, especially when we're in a rush, or on the go.
These Tropical Granola Breakfast Cookie Bars are fantastic! They're hearty and full of nutritious ingredients such as, oats, sunflower seeds, coconut flakes, and dried fruits, making them extremely satisfying, especially for breakfast.
The texture reminds us of something in-between a scone, flapjack and cookie - so good!
Although we have designed this recipe as a 'breakfast cookie', they are in-fact a delicious snack anytime of the day. They also make a great snack to enjoy on the go, or on a picnic.
These breakfast cookies are also fantastic for meal-prep, as they stay fresh for 2-3 days in an airtight container. Delicious eaten by themselves, or served with some natural yoghurt.

INGREDIENTS
300g of Plain Flour
180g of Butter
100g of Caster Sugar
1x Egg
2x capfuls of Vanilla Extract
Pinch of Sea Salt
1x heaped tsp of Baking Soda
1x cup of Oats
1/2 cup of Sunflower Seeds
1/2 cup (compacted) of Coconut Flakes
1/2 cup (compacted) of Candied Fruit Mix
METHOD
Preheat the oven to 190c and line a 30cm x 20cm oven dish.
Start by adding your butter and sugar to a small saucepan and melt on a high heat. Stir frequently ensuring the sugar doesn't burn. Heat for a few minutes until thoroughly incorporated. Remove from heat, and add the vanilla extract - mix together.
Add flour, salt and baking soda to a large mixing bowl and combine with a spoon or spatula.
Add in the oats, seeds and fruit, and evenly mix.
Add the butter and sugar mixture to the flour, along with an egg. Mix together well.
Transfer to your lined baking dish. Evenly spread and press down with your hands, to ensure even coverage, and to press down any loose pieces of fruit, or seeds.
Place on the tip shelf of a well preheated oven, and bake for exactly 25 minutes.
Remove from oven and allow to cool in dish. Once cooled, slice to your desired sized bars and enjoy.
Store in an airtight container.
