Tropical Pancakes

Fancy something sweet, fruity, with a taste of the tropics? If so, then how about these LUSH Tropical Pancakes...

Perfect at any time of the year, but are particularly delicious on a hot summers morning.

The fresh fruity flavours are sure to give your taste buds a FIESTA!

You could add any fruit that you desire and we went with fresh juicy mango and coconut - So good!

The pancakes are super thick and fluffy and are sure to impress.

The pancakes are topped with a delicious and refreshing mango and lime cream cheese - this is a dessert in itself...

INGREDIENTS


For the pancakes


  • 400g self raising flour

  • 1x heaped tsp baking powder

  • Pinch of salt

  • 3x eggs

  • 1x cup of dessicated coconut

  • 1 & 1/4 cup of milk

  • 200g coconut milk

  • 2x capfuls of vanilla extract

  • 1x heaped cup of fresh mango - diced into small cubes ( We used 1 large mango for filling and topping)

  • 2x tbsp of caster sugar


For the topping


  • 200g cream cheese

  • 2x tbsp of sieved icing sugar

  • Approx 2-3 tbsp of freshly squeezed mango juice

  • 1x Lime - zest and juice

  • 2x tbsp of dessicated coconut


METHOD


Start by preparing the cream cheese topping.

Add the cream cheese to a bowl along with the icing sugar and mix until smooth.

Cut approximately a 2 inch piece of mango and squeeze the juice into the mixture.

Cut the lime into quarters and squeeze 1 quarter into the mixture. Stir together and place into the fridge ready for later.


For the pancakes start by adding the flour, baking powder, salt, sugar and dessicated coconut to a large mixing bowl and mix together.

Now add the eggs, milk, coconut milk and vanilla and whisk together by hand with a fork. The mixture will be thick and lumpy and that's exactly the consistency you're after. The key to thick fluffy pancakes is a lumpy batter - so do not use a blender or handwhisk.

Now add your tiny diced pieces of fresh mango and fold it through the batter.

In a nonstick frying pan add a little drizzle of oil and heat on a high heat for a few seconds before adding a large dollop of the mixture - I use 2 large serving spoons for each pancake and spread to a circular shape.

Once the top of the pancake starts to form bubbles, it is time to flip. (Approx 1 minute)

Cook for a further minute and transfer to a plate while you cook the rest of the batter.


Once all the batter is used up it's time to assemble and serve.

Of course you can assemble and serve as you wish.

We did 2 pancakes per person and topped them with a big dollop of the cream cheese mixture. Then we added a sprinkling of dessicated coconut, the zest and juice of one of the 1/4 of lime.
