White Chocolate & Caramel Tart

Now this is one dessert that is sure to impress... It's indulgent, delicious and surprisingly not too rich. "That's got to be one of the best desserts I've ever had!", was the first reaction to this tart. Besides being easy to make, the plain white surface of the tart acts as a canvas for you to decorate as desired, be it with gingerbread men, or something else of your choice. We just opted for a simple drizzle of caramel. Serve this tart at your next Christmas party or just at home and enjoy!

INGREDIENTS

Approx 12 servings


For the biscuit base


  • 125g of melted butter

  • 300g of chocolate bourbon biscuits (blitzed in a food processor or smashed with a rollling pin)


For the tart filling


  • 450g of white chocolate (broken or chopped into very small pieces)

  • 200g of double cream

  • 25g of butter

  • 3x tbsp of caramel spread (or doce de leite)


Decorating


  • 1-2 tbsp of caramel spread


METHOD


For the biscuit base


Add the butter to a small saucepan and melt. Once melted remove from the heat and add the blitzed biscuits and mix together well.

Transfer the mixture to your tart tin.

Using your hands compress the mixture on the base and sides of your tin.

Pop it in the fridge for 15 - 20 minutes.

Add the caramel to your tart base and spread an even layer across the surface.

Put back into the fridge while you make your tart filling.


For the tart filling


In a large mixing bowl add the small pieces of chocolate and the butter.

Add your cream to a small saucepan and heat until just before it comes to a boil, stirring occasionally.

Remove from the heat and pour over your chocolate and butter. Whisk together until fully melted and smooth.

If the cream cools and the chocolate hasn't melted then return to the saucepan and heat on a low heat until fully melted.

Remove the tart tray from the fridge and pour the chocolate mixture evenly over the biscuit base.

Smooth with a spatula and pop it in the fridge for at least 2 hours to set.

Once set remove from the fridge and decorate with caramel sauce.

We used a piping bag to decorate but go crazy and let your decorating ideas go crazy!

Serve and enjoy!
