White Chocolate Cherry & Almond Cookies

Christmas is most definitely the season for cookies and this recipe is sure to be a regular this festive season.

These cookies or should I say, cookie bars are packed full of delicious flavours and have a real luxurious feel to them - these are what we call, 'Our Posh Cookies'

Santa is going to LOVE these with his glass of milk or something a little stronger to keep him warm on his cold sleigh ride...

These cookies have three of our favourite flavours combined and honestly we can't get enough of them. They are soft, foolproof and above all they are scrumptious.

INGREDIENTS

Makes approx 8-12 depending on your slice sizes


  • 300g of plain flour

  • 130g melted butter

  • 100g caster sugar

  • 100g demerara sugar

  • 1x egg

  • pinch of salt

  • 1x tsp of bicarbonate of soda

  • 2x tsp of vanilla extract

  • 230g of jarred cherries in syrup/kirsch drained & chopped in halves

  • 1/2 cup of flaked almonds ( plus extra for topping )

  • 160g white chocolate broken into chunky chunks

  • zest of 1 orange or clementine


METHOD


Preheat the oven to 190C and line a 30x20cm tray ( preheating the oven is very important for the correct cooking time )

Add the butter to a small saucepan along with the sugars and melt on a low heat until fully combined and the sugars dissolved. Stir occasionally.

Once the butter and sugars are fully combined, remove from the heat and put to one side to cool slightly.

In a large mixing bowl add the flour, salt and bicarb and mix together.

Now, add the vanilla and egg to the melted butter and mix together quickly ( you don't want the egg to start scrambling ) and transfer to your flour mixture. Combine the ingredients together well with a wooden spoon or spatula.

Now, go ahead and add all of the other ingredients and fold them evenly through your mixture.

Transfer to your lined tray and spread out evenly.

Top with a handful sprinkling of flaked almonds and place on the top shelf of the preheated oven and bake for 25 minutes.

They will be soft, but will firm slightly when cooled.

Allow to cool and then slice and serve.
