Personally, I had NEVER even heard of white chocolate brownies until just the other day and I have no idea why! They are soo good and still have that fudgy, crunchy on the outside, soft on the inside texture a regular brownie has, all while still being so easy to make. I have no idea what you'd even call them, 'white-ees'? Also, they are not blondies as they still use white sugar and not brown sugar. Anyway, they taste super festive and are a perfect Christmas time sweet treat, so let's get on with the recipe!

INGREDIENTS
Approx 12 servings
140g of butter
180g of white chocolate
120g of chunky chunks of white chocolate
200g of caster sugar
2x eggs
1x egg yolk
230g of plain flour
2x tsp of ground ginger
1/2 tsp of bicarbonate of soda
1/2 tsp of nutmeg
1x tsp of vanilla extract
pinch of salt
METHOD
Preheat the oven to 180C and line your 30 x 20cm tray.
Begin by melting together the butter and white chocolate on a low heat, stirring continuously.
Once melted remove from the heat and put aside.
In a large mixing bowl add all the other ingredients excluding the white chocolate chunks and mix together by hand well until everything is fully incorporated.
Now add the melted chocolate and combine together.
Fold through the chocolate chunks and transfer to your lined baking tray.
Bake for exactly 45 minutes, remove from the oven and allow to cool before slicing and serving (or serve warm if that's what you prefer). Enjoy!
