White Chocolate Salted Caramel Cookies

Who doesn't love a good cookie, I mean what's not to like?

These cookies have a touch of class and have a very luxurious and divine taste to them. OMG! They are so, so good and we love them.

A perfect treat for any time of the year and can be enjoyed at any time of day - perfect with your favourite hot drink.

The texture is perfect, they hold their shape, they're super easy to make and most of all they're super DELICIOUS!


A little tip when it comes to baking the perfect cookies is, to always preheat the oven for at least 15 - 20 minutes before baking...

INGREDIENTS

Makes 8 large slices or 16 smaller slices


  • 300g of plain flour

  • 130g of butter

  • 50g of caster sugar

  • 50g of muscovado sugar

  • 50g of demerara sugar

  • 180g of white chocolate (broken into big chunky chunks)

  • 1x Egg

  • pinch of salt

  • 1 tsp of bicarbonate of soda

  • 2 tsp of vanilla extract

  • Approximately 1/2 a cup of caramel spread or doce de leite

  • Pinch of sea salt for topping (add more or less to taste)


METHOD


Line a 30 x 20 cm tray and preheat the oven to 190C. Preheating the oven is very important.

In a large mixing bowl add the flour, bicarb, salt and chocolate and mix with a spoon or your hands well and set to one side.

Melt the butter in a small saucepan and then add both the sugars.

Mix together well until the sugars have completely dissolved into the melted butter and then remove from the heat.

Add the vanilla extract and the egg and whisk together by hand until everything is fully incorporated (you need to move fast on this bit or else the egg will start cooking).

Quickly add this to the dry ingredients and mix together well. We find it best to use a spoon and then finish it off with our hands.


Distribute all of the mixture evenly across a 30 x 20cm oven dish and then make lots of wells in the cookie dough and place dollops of the caramel spread on top and using the back of a spoon push the caramel into the wells.

Sprinkle all over with some sea salt.

Pop it on the top shelf of the oven and bake for exactly 25 minutes. They will still be soft to touch, but will firm once cooled.

Remove from the oven and allow to fully cool before slicing and eating.

Serve and enjoy!
