INGREDIENTS
Makes 6 fritters
2x medium courgettes - grated
1x large carrot - peeled & grated
3x large cloves of garlic - peeled & grated
1 inch piece of fresh Ginger - peeled & grated
Large handful of fresh Coriander leaves & stems - roughly chopped
Zest of 1 Lime
Juice of 1/2 a lime
Handful of Pumpkin Seeds
2x large pinches of sea salt
2x large pinches of black pepper
2x tsp of ground coriander
1x egg - beaten
2x tbsp of almond flour or flour of your choice
METHOD
Grate your courgettes & carrot and be sure to squeeze as much liquid from them as you can with your hands.
Once the liquid has been squeezed from the veg add them to a large mixing bowl.
Add the rest of the ingredients and mix thoroughly with your hands, ensuring even distribution of the seasonings.
Using your hands divide the mixture into 6 patties or 3-4 larger patties - place to one side.
Preheat a frying pan (we used nonstick) on high heat and then add 2x tbsp of olive oil.
Once the oil has heated carefully add your veggie patties and fry on each side for 3-4 minutes and then flip again and cook for a further 1-2 minutes on each side or until golden brown on each side and slightly crispy.
